Akhisar

The estate

Dereköy.

Our family’s groves stand on the slopes above Akhisar, where olive cultivation has shaped the landscape for generations.

The soil is old and the light is long. Nothing about the way we farm is in a hurry: the fruit is picked green and by hand, and it reaches the mill the same day it leaves the tree.

Albacastra is the translation of that place into a bottle. Akhisar means white castle in Turkish — ak, hisar — and we carried that meaning into Latin: alba castra.

The oil

Green, bitter, alive.

I
Fresh grass
Cut grass and crushed leaf — the grove itself.
II
Green almond
A soft, milky bitterness at the centre of the palate.
III
Artichoke
The signature of early Aegean fruit.
IV
Pepper
A slow, clean burn at the back of the throat.

The object

Made to be kept on the counter.

Dark green glass against the light, a cotton-paper label printed in two inks, and a carton built to survive the post rather than to be photographed once.
